Day 4 Experiences

Today I mapped out what foods I had left and adjusted my plan for the day accordingly. I realized I have been consuming bread more quickly than I would like, so I tried to limit the amount of bread I ate today in order to make sure I’d have enough. Because Thursdays I’m usually rushed to get to my 8am class, I decided peanut butter and a banana would be a quick option for breakfast. I decided that lunch would be my one can of tuna and a piece of toast. photo 2-4It was pretty bland without the mayo or avocado I usually have with it, and it wasn’t very filling on only one piece of bread. I was soon hungry again and had another banana and peanut butter. For an early dinner I had chicken, pasta, and green beans. This dinner is becoming routine for me but it’s not very satisfying anymore. I had to stay up late Thursday night because of my workload and I got hungry again later. I opted for a can of soup which has become my favorite meal.

 

Today was the first day that my cholesterol levels were lower than the limit. This is because I opted out of eggs for the day. Sodium levels almost reached the daily limit today likely due to my soup. Vitamin and mineral levels are low for the 4th consecutive day. This raises the concern of people on food stamps not being able to get adequate vitamins from the meals they can afford. I would consider the food I bought relatively healthy, and even so I have yet to reach my calcium, iron and vitamin goals. Clearly this would be a constant struggle for those living on food stamps.

Today I also noticed that I felt lightheaded throughout the day. I couldn’t focus or absorb information given in class. It’s obvious that food choices affect all aspects of life and low energy levels would be the norm.
